My mom used to serve boiled cabbage when we were kids, and I loved it with butter melted all over it. This recipe from DivasCanCook.com brought those memories back, and tasted even better boiling the cabbage in chicken broth. Enjoy this with just about any meat, it's a quick and easy low-carb side that's also totally delicious. We served it with Hamburger Patties with Creamy Tomato Sauce, and I'll share that recipe next week. Enjoy!
Ingredients
• 1 head of cabbage (if it's smaller, I used a large quarter)
• 2 Tablespoons butter
• 2 Tablespoons olive oil
• ½ teaspoon salt
• ½ teaspoon of seasoning salt (or season to taste)
• Fresh black pepper
• 1½- 2 cups chicken broth (you can use water but chicken broth makes it taste so good!)
Instructions
1. Cut Cabbage into quarters, removing the hard stem. Slice each quarter into 1-inch wide strips.
2. In a large pot, add butter, olive oil, salt, pepper, & cabbage.
3. Add in chicken broth and toss.
4. Bring to a boil over medium-high heat. Cover and reduce heat to medium low.
