Resep Siomay Ayam Udang (15-20 pcs)
Bahan adonan siomay:
200 gr paha ayam fillet
50 gr kulit ayam
50 gr udang kupas (bisa diganti ayam)
2 siung bawang putih
1 butir putih telur
9 sdm tepung sagu
½ sdm garam
1 sdm gula
½ sdt merica
¼ sdt kaldu jamur
3 sdm es batu
2 sdt saus tiram
2 sdt minyak wijen
2 sdt kecap asin
50 gr wortel parut
15-20 kulit pangsit
Bahan saus cocol:
2 siung bawang putih
1 siung bawang merah
3 cabai rawit
1 cabai merah ukuran sedang
6 sdm saus sambal
1 sdm cuka
150 ml air
2 sdm minyak goreng
2 sdt gula
½ sdt kaldu jamur
Langkah:
1. Masukkan ½ ayam, bawang putih, tepung sagu, putih telur, saus tiram, kecap asin, minyak wijen, merica, garam, gula, kaldu jamur, dan es batu ke dalam food processor cincang hingga halus
2. Masukkan ½ ayam dan udang, cincang sebentar
3. Pindahkan ke wadah, masukkan ½ parutan wortel, aduk rata
4. Ambil kulit dim sum, beri 1 sdm adonan lalu bungkus dan beri parutan wortel di atasnya
5. Kukus siomay 15-20 menit
6. Untuk saus cocolan, cincang bawang putih, cabai rawit, dan bawang merah. Tumis hingga wangi lalu tambahkan air
7. Masukkan saus sambal, cuka, gula, dan kaldu jamur. Masak hingga mendidih
8. Siomay siap disajikan

Chicken and Shrimp Shumai Recipe (15-20 pcs)
Shumai Filling ingredients:
200 g chicken thigh fillet
50 g chicken skin
50 g peeled shrimp (interchangeable with chicken)
2 clove garlic
1 pc egg whites
9 tbsp sago flour
1/2 tbsp salt
1 tbsp sugar
1/2 tsp pepper
1/4 tsp mushroom stock powder
3 tbsp ice cubes
2 tsp oyster sauce
2 tsp sesame oil
2 tsp soy sauce
50 g shredded carrots
15-20 Shumai wrappers
Dipping Sauce ingredients:
2 clove garlic
1 pc shallots
3 bird's eye chili
1 pc medium-sized red chili
6 tbsp chili sauce
1 tbsp vinegar
150 ml water
2 tbsp cooking oil
2 tsp sugar
1/2 tsp mushroom stock powder
Steps:
1. Add half of the chicken, garlic, sago flour, egg whites, oyster sauce, soy sauce, sesame oil, pepper, salt, sugar, mushroom stock powder, and ice cubes into the food processor. Blend into a smooth consistency.
2. Add the rest of the chicken and the shrimp in. Blend for a bit.
3. Transfer to a bowl. Add half of the shredded carrots. Mix well.
4. Grab a Dim Sum wrapper. Add 2 tbsp of filling and wrap it. Add some shredded carrot on top.
5. Steam the Shumai for 15 - 20 minutes.
6. For the dipping sauce, mince the garlic, bird's eye chili, and shallots. Sauté until fragrant, then add some water.
7. Add the chili sauce, vinegar, sugar, and mushroom stock powder in. Bring to a boil.
8. Shumai is ready to serve.
