Here is how I cook a Texas-style turkey breast on my @KamadoJoeGrills. I highly recommend this method if you don't have the time to prep and cook a whole turkey.
This 6 pound turkey breast took just under 3 hours!
- cut out the ribs with poultry shears if they are still attached
- break the breast bone so the turkey can lay flat
- remove the skin as it will end up rubbery
- coat in olive oil and season with your favorite rub
- bring your smoker to 275°, I used hickory wood
- smoke for ~2 hours until you have a nice golden brown color
- place the turkey breast side down on top of 1 cup of butter slices
- wrap in foil and return to the smoker until you reach 160° internal
- rest for 45 minutes and then slice the turkey breast off the bone and serve
