𝐈𝐍𝐆𝐑𝐄𝐃𝐈𝐄𝐍𝐓𝐒:
Recipe 1 -
Ingredients For Dosa -
* Chickpeas Flour (चने का आटा) - 1 Cup
* Salt (नमक) - As Per Taste
* Turmeric Powder (हल्दी पाउडर) - 1/4 Tbsp
* Kashmiri Red Chilli Powder (कश्मीरी लाल मिर्च पाउडर) - 1/4 Tbsp
* Water (पानी) - As Required
Ingredients For Chutney -
* Oil (तेल) 1 Tbsp
* Split chickpeas (चना दाल) - 3 Tbsp
* Coconut (नारियल) - 1/4 Bowl
* Green Chilli (हरी मिर्च) - 2-3
* Red Chilli (लाल मिर्च ) - 2
* Coriander leaves (धनिए के पत्ते) - Some
* Salt (नमक) - As Per Taste
* Lemon Juice (नींबू का रस) - Some
* Water (पानी) - As Required
* Cumin Seeds (जीरा) - Some
* Mustard Seeds (राई) - Some
* Curry Leaves (करी पत्ते) - Some
Ingredients For Masala -
* Oil (तेल) - Some
* Cumin Seeds (जीरा) - 1/2 Tbsp
* Mustard Seeds (राई) - 1/2 Tbsp
* Urad bean (उड़द की दाल) - 1/4 Tsp
* Asafeodita (हींग) - 1/4 Tbsp
* Green Chilli (हरी मिर्च) - Some
* Curry Leaves (करी पत्ते) - Some
* Onion (प्याज) - 1
* Turmeric Powder (हल्दी पाउडर) - 1/4 Tsp
* Salt (नमक) - As Per Taste
* Coriander Powder (धनिया पाउडर) - 1 Tsp
* Crushed Red Chilli Powder (कुटी हुई लाल मिर्च पाउडर) - 1/4 Tsp
* Dried Mango Powder (अमचूर) - 1 Tsp
* Kashmiri Red Chilli Powder (कुटी हुई लाल मिर्च पाउडर) - 1/4 Tsp
* Boiled Potato - 2
* Coriander leaves (धनिए के पत्ते) – Some
Recipe 2 –
Ingredients For Dokhla -
* Rice (चावल) - 1 Cup
* Water (पानी) - As Required
* Semolina (सूजी) - 1/3 Cup
* Oil (तेल) - 2 Tbsp
* Cumin Seeds (जीरा) - 1/2 Tsp
* Mustard Seeds (राई) - 1/2 Tsp
* Asafeodita Powder (हींग) - 1/4 Tsp
* Curry Leaves (करी पत्ते) - Some
* Green Chilli (हरी मिर्च) - 1
* Coriander leaves (धनिए के पत्ते) - Some
* Salt (नमक) - As Per Taste
* Chilli Flakes (मिर्ची के परत) - Some
* Curd (दही) - 1/4 Cup
* Eno Sachet (ईनो पाउच) - 1
𝐑𝐄𝐂𝐈𝐏𝐄:
𝐅𝐨𝐫 𝐃𝐨𝐬𝐚, in a bowl take Black Gram Flour & add Salt, Turmeric Powder & crushed Red Chilli Powder & make a fine batter by adding some Water. Cover & keep aside for 10 minutes. Then heat a pan, grease some Oil & sprinkle Water, and wipe it. Spread the batter in a circular motion & put Oil, Coriander Leaves & Aloo Masala. Cook it & fold the dosa.
𝐅𝐨𝐫 𝐅𝐢𝐥𝐥𝐢𝐧𝐠, keep the pan on the flame & put Oil, Cumin Seeds, Mustard Seeds, White Urad Dal, Asafetida/Hing Powder, chopped Green Chilli, Curry Leaves, Onion, Turmeric Powder, Salt, Coriander Powder, crushed Red Chilli Powder, Kashmiri Red Chilli Powder & boiled Potato. Cook all well & garnish Coriander Leaves.
𝐅𝐨𝐫 𝐂𝐡𝐮𝐭𝐧𝐞𝐲, keep the pan for heating & add Oil, Chana Dal, Fresh Coconut pieces, Green Chilli, and dried Red Chilli. In a mixing jar & put Coriander Leaves, this Mixture, Salt, Lemon Juice & Water. Grind well & make a fine Chutney. Put the tadka in the Chutney & enjoy!
𝐅𝐨𝐫 𝐃𝐡𝐨𝐤𝐥𝐚, soak some Rice& grind it by adding Water. Transfer the paste to a bowl & add Semolina & mix well. Then keep the pan for heating & put Oil, Cumin Seeds, Mustard Seeds, Asafetida/Hing Powder, Curry leaves & Green Chilli. Cook well & put it & add Salt, Coriander Leaves, Chilli Flakes. Keep asiode for 10 minutes. Then add Curd, Eno & Water & mix well. Give steam for 10-12 minutes. Garnish with Coriander Leaves & Chilli Flakes & cut it into pieces & enjoy!
