Recently I visited Sally's Fish Market, www.sallysfishmarketinc.com, in Newburgh, NY, and I bought a few goodies. One of those goodies was a 4.5 pound frozen octopus.
The recipe is simple:
Wash the octopus with lots of water to get rid of any sand particles, cut the portion where the eyes are and discard it. Remove the mouth/beak and discard it. Cut the tentacles and keep the head whole.
You will need:
5 large potatoes cut thick.
6-7 garlic cloves, whole.
About 2 tablespoons of tomato paste.
About 2 tablespoons of rosemary.
One cup of olive oil.
Freshly ground pepper.
Add everything in a roasting pan and mix well.
Preheat the oven to 350 degrees F and bake it for one hour and 45 minutes.
Serve one to two tentacles per person with a few potatoes and a generous drizzle of the fantastic sauce.
