So I've done some research on how I could add wireless Apple CarPlay to my vehicle and found this solution from a company called CarPlay2Air.

Check the faq on the companies website to make sure it’s compatible with your system before purchasing.
Your vehicle will need to have Apple CarPlay installed from the factory for this to be able to work so make sure that your vehicle is equipped with wired CarPlay from the factory before purchasing. Also be sure to check the companies website for compatibility.
The device is super easy to setup. You basically plug it into the usb port on your vehicle, connect your Apple iPhone to your vehicle using Bluetooth and then you should be all set to go. After you set it up the first time, the system will boot into wireless Apple CarPlay every time you get in your car without having to plug your phone into a cable. It's pretty awesome, but you definitely pay a price for this little bit of added convenience.
Couple of drawbacks that I have noticed with CarPlay2Air and its wireless Apple CarPlay solution. Sometimes it takes it quite a bit of time for it to load. As you see in this video, it took the system almost 60 seconds to boot into Apple Wireless CarPlay. This happens intermittently so the amount of time can fluctuate drastically. The CarPlay2Air device is also pretty expensive. At the time of filming, it costs $160USD, which is pretty expensive for a little bit of plastic with small computer board inside. There are other solutions out there that offer the ability to connect to Apple CarPlay wirelessly, but they all cost about the same price, and this is one of the better known companies. The final drawback is shipping time. It took a little over two weeks to receive mine, so you need to be patient.
Overall, I'd say the device works well to connect wirelessly to Apple CarPlay, but it comes with a hefty price tag. Only you can decide if plugging your phone in annoys you enough to pay the price tag for this device.
