Ingredients:
1 block super or extra firm tofu (pat tofu dry with a paper/ kitchen towel)
Few dash salt, pepper, garlic and onion powder to season.
1/2 cup cornstarch ( optional)
Oil to fry
1/4 tri colored bell peppers
3 cloves garlic finely chopped/mince
Small thumb Ginger mince/grater
1/4 onion( I used white and purple
1/2 lemon zest and few drops lemon juice
Roughly 3/4 cup Thai sweet chili sauce ( add more of less if needed)
1/4 cup water
* 1 stalk scallion chopped to garnish
Dash all purpose seasoning and pepper to taste
2 bunch mature spinach ( Wash and chopped)
** I purchased this at my local Asian supermarket
1/2 onion
Piece of scotch bonnet pepper
1/4 bell pepper
2 stalk scallion
3 cloves garlic
1/2 tomato
All purpose seasoning
Oil
Serve with rice and a side of fried ripe plantain or something else of your choice. Enjoy!
