Tools:
Medium-sized bowl
Grater
Baking sheet pan
parchment paper (optional, but makes for easy clean-up)
Ingredients:
1 cup whole wheat flour (I used white wheat, but you can also red wheat, rye, kamut, or spelt)
1 1/2 cups all-purpose flour
1 1/2 tablespoons baking powder ( I know it is a lot, but this is what gives the biscuits a beautiful rise)
1/2 teaspoon salt ( use 3/4 teaspoon if you are using unsalted butter)
1/2 cup frozen stick of butter
1 cup plus 1 tablespoon of buttermilk, chilled
Preheat the oven to 415 degrees (remember it is so important to have the oven hot when you are ready to bake).
Mix together the flour, salt, and baking powder in your bowl. Set this aside.
Grate your frozen butter with a box grater.
Mix immediately into your dry ingredients with a fork. This shouldn't take too long. It is grated so it will blend quickly.
Pour in the buttermilk. Blend with the fork again, this should only take a minute or so.
Turn it out and gently knead it until it comes together. This should only take a few seconds. DON'T OVERMIX.
Spread into a 14x10-inch rectangle. Trifold the dough as shown in the video. Cut into the desired shape. Gently knead together the remaining dough and cut again.
Place on your baking sheet, I like to use parchment paper. Move immediately to the preheated oven.
Bake for 15 minutes, you may need to go a little shorter or longer depending on your oven. Remove and serve, there is nothing better than hot biscuits!
