Southwestern Turkey Soup
Ingredients
2 cups shredded cooked turkey (Thanksgiving leftover turkey)
5 cups turkey broth or chicken broth
1 (15oz) can black beans
1 (15oz) can corn
1 (14oz) can diced tomatoes with basil, garlic, and oregano
1 (4 oz) can chopped green chili peppers
2 roma tomatoes, chopped
1 diced green bell pepper
2 diced jalapenos (optional)
1 onion, chopped
2 garlic cloves, crushed
2 Tbsp Olive Oil
1 tbsp of each, oregano, chili powder, ground cumin, onion powder, garlic powder
Smoked paprika, salt, and pepper to taste
Toppings
Fresh cilantro
Freshly squeezed lime juice
Sour cream
Avocado
Shredded Mexican cheese
Chili Cheese Fritos
In a larger pot over medium heat, sautee onions and bell pepper until soften.
Add roma tomatoes, jalapeno(s), crushed garlic, and diced green chilies. Mix, let cook for 2 to 3 minutes.
Add spices, oregano, chili powder, ground cumin, onion powder, garlic powder, smoked paprika, salt and pepper. Mix to incorporate all the ingredients.
Add in your cooked turkey or chicken meat, diced tomatoes with basil, garlic, and oregano, turkey broth, black beans, and corn.
Mix and simmer for 30-40 minutes.
Add your favorite southwestern topping and enjoy.
