I love using coconut milk for all types of recipes, both savory and sweet. While the canned stuff is convenient, there's nothing quite like fresh milk straight from whole coconuts. It has a better taste, more nutrients, and is actually pretty fun to make--promise!
This video gives a step-by-step on how to make homemade coconut milk: opening the coconut, getting out the coconut meat, and transforming it into milk.
Note: the amount of water you add will depend on what you're planning to use the milk for. If you want it thicker, add less water! With my double extraction method (to get as much of the coconut out as possible) I end up using about 8 cups water for 2 brown coconuts. I'm planning to remove the water anyway when I reduce this milk to a custard--stay tuned for that next week!
