* During this time, Gordon was in tremendous debt, betting everything on his restaurant. He'd left Aubergine after they fired Mark Seargeant, his sous chef. Everybody from Aubergine left, coming with Gordon to help run his new restaurant. They eventually won three stars in 2001, and hasn't lost any (as of October 2024).
