Filling 🍒
900g pitted cherries
70g sugar
50g cornstarch
Dough 🥮
200g sour cream (20%)
200g butter (82.5%)
70g sugar
400g flour
8g baking powder
Cream 🍧
550g sour cream (20%)
180-200g sugar
350g heavy cream (35%)
70g chocolate
Preparation: 👉 To the defrosted cherries, add sugar and cornstarch, stirring constantly, bring to a boil, and cook until the mixture thickens. Then, set it on the balcony to cool. 👉 Mix soft butter with sour cream and sugar, beat, add flour with baking powder, quickly knead the dough, and chill it well for about an hour. 👉 Divide the dough into 5 parts, about 170g each. Roll each part on parchment paper, adding a bit of flour; the size should be approximately 28x23 cm. I place an A4 sheet of paper under the parchment to help shape it ☺️. Make it slightly shorter and wider! Then, cut each sheet into 3 strips. 👉 For each strip, place about 60g of filling – the thickness of about 1 cherry. Roll it into a tube, pinch the seam tightly, and place it seam side down on a baking sheet lined with parchment paper. 👉 You’ll get 15 tubes. Bake at 210°C for 15-16 minutes, without overbaking. As soon as the dough starts cracking from the hot filling, take it out of the oven and gently squeeze the tubes to make them more even and higher. Let them cool completely! 👉 Add sugar to the sour cream, stir (do NOT whip), and let the sugar dissolve in about 10 minutes. Whip the heavy cream into soft peaks and fold it into the sour cream in three additions. The cream will be quite thick. If desired, you can add a few drops of lemon juice. 👉 Spread a little cream on the bottom of a dish. Place the thinner tubes at the bottom, spreading cream on each layer and covering everything with cream. Then, leave it on the balcony overnight 😉. In the morning, you can sprinkle with grated chocolate, or take 70g of chocolate, add 55g of heavy cream, mix, heat it, and pour the ganache over the cake 😍.
