Salatet Aswad is a popular Sudanese eggplant dip. It could be served as a side dish on bigger occasions like weddings, parties, funerals etc. or eaten at home on daily basis. It is one of my favourite dish, it is delicious, savoury, tangy and light. If you love eggplant, you will definitely get hooked on!
Ingredients:
3 eggplants
2 to 3 garlic cloves
Green chilies (I used bird’s eye) as much or as little as you can handle
Lots of oil for frying
For the sauce:
1 tbsp tomato paste
1/2 cup tomato purée (canned tomatoes can be used)
1 tbsp peanut butter (if you are using unsweetened then add a pinch of sugar)
Spices : 1/2 tsp of each (cumin, ground coriander and chili powder)
Salt and pepper according to taste
Juice of 2 limes and can add more
1 tsp yogurt
