Sambal Udang
Ingredients to blend without water
1 large onion
5 cloves of garlic
1.5 inch shrimp paste
1 inch ginger
1 large tomato
1 handful of dried chilies
other ingredients
1/2 cup oil
1 lemongrass
3 screw pines
1 tsp thick soy sauce
1kg prawns that washed in turmeric water
salt as required
1 dried tamarind or can use tamarind paste to replace
some white pepper, optional
some onion
1 tsp brown sugar, optional
METHOD
1. pour oil in pan
2. Add blended ingredients together with lemongrass
3. Cook till oil separate
4. Add 3 screwpines and cook again for 5 to 10 under low heat
5. After 10mns add 1 tsp thick soy sauce, followed by prawns. Stir well
6. Season with salt and cook for another 5mins.
7. Add dried tamarind
8. After prawn fully cooked, add white pepper, onion
9. brown sugar at the end and off the flame after mix well.
Ready for serving with plain rice or nasi lemak rice
