Calcutta/Kolkata Mutton Biryani is a mixed rice dish . Mutton Biryani is a south asian mixed rice dish, made with herbs, spices, rice and mutton meat. Its cooked very slowly to let all the spices blend in together and infuse into every grain of rice. Biryani usually cooked with rice, Yogurt, meat and spices. Calcutta Biryani is much lighter on spices and serving potato with meat is the specialty of Kolkata . Kolkata has a special and totally different style of biryani.
The specialty of Kolkata biryani is Potato and Egg are also
served in basic Mutton biryani.
Ingredients :- (For Marination)
Mutton - 500 gm
Oil - 1 tbsp
Salt to taste
Yogurt - 50 gm
Turmeric - 1 tsp
Cumin powder - 1 tsp
Red chili powder 1 tsp
Coriander powder - 1 tsp

Garlic - 1 tbsp
Ginger - 1 tsp
Keora water - 1/2 tsp
Rose water - 1/2 tsp
Ingredients :- (for making rice)
Basmati rice - 350 gm
Salt to taste
Oil - 2 tsp
Shahi jeera - 1/2 tsp
Bay leaf -3 pieces
Green cardamom - 2 pieces
Cloves - 4 pieces
Cinnamon stick - 2 n (5 pieces)
Ingredients :- (for making the mutton)
Oil - 2 tbsp
Salt to taste
Turmeric - 1 tsp
Cumin powder - 1 tsp
Kashmiri Red chili powder 1 tsp
Coriander powder - 1 tsp
Green cardamom - 4 pieces
Cloves - 4 pieces
Cinnamon stick - 2 n (1 pieces)
Onion - 1 big size (cut into slices)
Garlic - 1 tbsp
Ginger - 1 tsp
Ghee - 1 tbsp
Potatoes - 4 pieces (cut into half)
Eggs - 2 (boil)
Milk - 2 tbsp
Saffon - 1/2 tsp
Pinch of food color (optional)
Ingredients :- (for making Dum Biryani)
Cook Mutton
Saffron/food colour - 1 pinch (soaked the milk 2 tbsp)
salt to taste
Oil - 2 tbsp
Ghee - 1 tbsp
Biryani Masala Powder - 1 tbsp (homemade)
Kewra water - 1 tbsp
Rose water - 1 tbsp
Meetha Attar - 1 drop (for nice aroma)
Eggs - 2 (boil)
Wheat flour - 1 cup (coated the pan)
mix some water and make a dough
