This is no ordinary cookie. This is a soft baked, buttery chocolate chip cookie that is stuffed in Nutella. That moment when the melty Nutella floods in your mouth, it will be the best eating experience of the month. The year!!

NUTELLA STUFFED COOKIES
10 slightly heaped tbsp Nutella or other chocolate-nut spread
1/2 cup (90g) dark chocolate chips (or chopped 70% dark chocolate)
Cookie dough:
1 1/3 cups plain flour / all-purpose flour (200g)
1/2 tsp baking soda (bi-carbonate soda*)
1/4 tsp cooking / kosher salt
120g / 8 tbsp unsalted butter, cut into 1 cm / 1/2" cubes (fridge cold is fine)
2/3 tightly packed cups brown sugar (140g)
1 tsp vanilla extract
1 tsp honey or corn syrup*
1 large egg (~55g / 2 oz), at room temp
1. Mix flour, baking soda and salt.
2. In a separate bowl, barely melt butter in the microwave then finish melting by mixing. Mix in vanilla, honey and sugar, then egg (should look like caramel). Mix in flour mixture – should be soft, too sticky to roll. Refrigerate 1.5 hrs until firm enough to roll balls.
3. Spread Nutella into ~8mm/ 1/3"thick rounds on lined tray until firm enough to pick up.
4. Roll dough into log, cut into 10 equal pieces. Flatten piece of dough, enclose Nutella with dough. Press in choc chips, shape cookie to 1.5cm/ 3/5” thick rounds.
5. Bake 12 – 13 min at 180°C/350°F (160°C fan) until the edges are golden and the surface is pale golden. Cool 10 min on tray, then at least 5 min on rack. Attack!
* Can sub with 1 1/4 tsp baking powder though cookie is not quite as chewy and will be slightly paler. ^ Can leave out, cookie will be slightly paler and doesn’t keep quite as well. Do not sub with maple syrup or other sweet syrup.
