1 medium cauliflower cut into florets
1 cucumbers diced
1 small red onion chopped
1 cup baby spinach
1 15 oz can of chickpeas drained and washed
1/2 cup chopped walnut
1/4 cup sunflower seed
2 tbsp pomegranate kernels
1/2 tsp turmeric powder
1 tsp cumin
Salt to taste
1 tsp cayenne pepper
2 tbsp olive oil
For dressing
2 tbsp tahini
1 tbsp maple syrup
1 tbsp balsamic vinegar
1 tbsp Aleppo pepper
Salt to taste
Juice of 1/2 lemon
Lemon zest
Little water
In a bowl take the cauliflower and chickpeas
Add turmeric , salt , cumin powder ,cayenne , olive oil mix well
Line a sheet pan with parchment paper
Spread the cauliflower mix
Bake for 20 min at 375 degree
Make the Dressing with all the ingredients under dressing
Take the crispy chickpeas and Cauliflower in a bowl .. add cucumber.. add onion .. add spinach .. add walnut ..
Add the dressing
Toss
Then add sunflower seeds and pomegranate
