Let’s go on a picnic that doesn’t suck!
If we’re being honest, most of the beautiful picnic spreads you see on Instagram just aren’t realistic, but this snack box is SO easy to pack and you can fill it with just about anything.
I like to put together my picnic by thinking about categories. Protein, carbs, fiber and fats! Just like your plate at home, but broken down into little bite-size pieces and easy to bring along.
Here’s what’s in my snack box: orzo salad, melon and homemade stracciatella salad, organic cheese from France, @chomps 100% Grass Fed Beef Sticks, crackers, fresh fruits, a delicacy sandwich and homemade olive tapenade!
All you need is to bring a fork, some napkins and your favorite drinks!

Stracciatella Cheese & Cantaloupe Salad (Servings 4 side salads or 2 as a main)
Ingredients
1 1/2 cups stracciatella cheese
1 cantaloupe
3 tbsp olive oil
1/2 tsp salt
1/4 tsp pepper
2 tbsp balsamic vinegar
1/2 cup chopped pistachios
2 tbsp honey
Instructions
Cut the cantaloupe in half, scrape the seeds out of each half and discard them. Use a melon baller to scoop out small balls of melon until you have done this to both halves. Set aside the melon balls. (If you don't have a melon baller, chop the melon into 3/4-1 inch pieces).
To a low bowl, layer the stracciatella cheese, followed by the melon balls, the olive oil, salt and pepper, balsamic vinegar, chopped pistachios and finally drizzle the honey over the whole salad. Serve immediately.
