Today I made Kaya with my 92-year-old grandma. A really simple recipe but takes lots of time, effort and love. She may be 92 but she still is very sharp and feisty. Standing and cooking for over 2 hours non-stop!
1) Whisk 3/4 of 1kg sugar and 10 eggs together in a bowl until smooth consistency.
2) Strain the mixture into the double boiler
3) Stir and let it boil with indirect heat for 30 min. Be sure to keep stirring.
4) Put the Pandan leaves in the mixture with the fresh coconut milk.
5) Caramelise 1/4 of the white sugar that's left and slowly pour into the mixture while stirring.
6) After an hour, pour the rest of the coconut milk and keep stirring.
7) Stirr and cook for another hour until mixture turns brown and smooth. The misture will slightly reduce and turn into a silky smooth and sweet spread.
8) When done, pour into glass jars and wait to cool down before placing them in fridge to keep.
To be eaten on toast and thick slice of butter and a light sprinkle of salt.

1x Whole Grated Fresh Coconut (if not, canned coconut cream will do)
1kg White Castor Sugar
3x Fresh Pandan Leaves
Utensils
- Rough Strainer
- Double boiler or big bowl over boiling pot of water will do
