Kothamalli Chicken Curry:
Chicken (curry cut) - 500g
For the Paste:
Oil - 2 tbsp
Cumin Seeds - 1 tsp
Garlic - 8 nos
Cashew Nuts - ¼ cup
Coriander Roots - 4 nos
Coconut (Grated) - 1 Cup
Green Chillies (finely chopped) - 2 nos
Water - ¼ cup
For the Gravy:
Oil - 2 tbsp
Ghee - 1 tbsp
Cinnamon - 1 Stick
Green Cardamom - 3 nos
Cloves - 3 nos
Cumin Seeds - 1 tsp
Green Chillies (finely chopped) - 1 no
Curry Leaves - 10 nos
Onions (sliced) - 2 nos
Ginger Garlic Paste - ½ tbsp
Turmeric Powder - ¼ tsp
Coriander Powder - ½ tbsp
Salt - ½ tbsp
Pepper - 1 tsp
Sugar - 1 tsp
Coriander Leaves (chopped) - For garnish
Water - 1 ½ cup
Cooking Instructions:
1. Heat oIl in a pan, add the cumin seeds, green chillies and let it crackle.
2. Add the cashew nuts, cook it till it is slightly brown
3. Add the coriander roots, saute it for a while. Add the coconut and cook it for a minute.
4. Transfer the mixture to a blender, add water and blend it to a fine paste.
5. In another pan, heat oil, add cinnamon, cardamom, cloves, cumin, green chillies and let it crackle.
6. Add the onions, saute them till they turn golden brown.
7. Add the ginger garlic paste and cook it for a few seconds.
8. Add turmeric and coriander powder. Cook it for a minute.
9. Add the chicken and mix it till it coats with the masala.
10. Add water, mix well. Cover and cook the chicken for 15 minutes on a medium flame, stirring occasionally.
11. Add the coriander paste, Mix it till the chicken is coated evenly.
12. Cover and cook the chicken for 5 minutes on a medium flame, stirring occasionally.
13. Transfer the chicken to a bowl. Garnish it with chopped coriander. Serve it with rice, chapati/paratha or dosa.
