The best way to see Portugal is to take several day trips to a place and explore it's surroundings. In fact, an overnight stay would be better as you'll have more time to make the most out of your trips.
Either way, it's easy to go from the beach to the mountains or the countryside in a day.

In this video (and more like it), I intend to explore a beach and the countryside, all preferably within an hour of one another. We take a trip to Figueira da Foz and then to the castle of Montemor-o-Velho.
