Risol is a pastry filled with meat, usually minced meat, and vegetables wrapped in an omelette, and fried after being coated with panir flour and beaten chicken eggs. This dish can also be baked in the oven, and served as hors-d'oeuvre or mild entrée. Small risoles can be used as garnishes for dishes from large pieces of poultry or beef. The contents of risoles can be chicken, beef, fish, shrimp, button mushrooms, carrots, potatoes, or beans. Omelet dough is made from a mixture of flour, egg yolks, butter (margarine), and water or milk. Two types of risoles known in Indonesia are vegetable risoles mixed with stir-fried meat, and risoles containing ragout. The shape of this cake is rectangular like an envelope. Triangle-shaped risoles generally contain ragout. Risoles can be eaten with runny bean sauce, bottled chili sauce, or cayenne pepper.
