LAY HO MA everyone! This is one special dish. Its fiery, its fragrant, its addictive, and its interactive! Its a spicy lover's dream to toss your noodles in a delicious red chili sauce right in your own serving plate. Join me in this episode and learn how to make an easy vegan Dan Dan noodles. Let's begin.
Ingredients:
2 x noodles
1/2 tbsp Sichuan peppercorns
1/4 tsp black peppercorns
2 tbsp + splash soy sauce
2 tbsp chili oil
1 tbsp cane sugar
1/2 tbsp black rice vinegar
1 tbsp sesame oil
1 cup water (from noodles)
1/4 cup dried chilies
1/2 can jackfruit
1 tbsp rice wine
drizzle of olive oil
2 sticks green onion
sprinkle of white sesame seeds
1/4 cup peanuts
Directions:
1. In a hot saucepan, toast the peppercorns together for about 1min. Then, transfer them to a mortar and pestle and grind finely
2. Remove any seeds from the canned jackfruit, and squeeze out the water from them. Roughly chop them
3. Roughly chop the dried chilies
4. Heat up the saucepan again and add olive oil. Then, add the chilies and jackfruit. Sauté for 5-8min
5. Add the ground peppercorns and a splash of soy sauce. Sauté for another 2min, then set aside
6. Fill the saucepan with water and bring to a boil for the noodles
7. Make the sauce by combining the soy sauce, sesame oil, vinegar, chili oil, and cane sugar
8. When the water comes to a boil, place in your noodles and cook to package directions. Loosen the noodles occasionally with chop sticks
9. Plate half the sauce and add 1/2 cup of hot water from the noodles
10. Plate the noodles onto the sauce. Top with the white sesame seeds, jackfruit, and finely chopped green onion
