Aloo Puff, also known as Potato Puff or Aloo Patties, is a delicious Indian snack made with a flavorful potato filling enclosed in flaky puff pastry. Here's a simple recipe for making Aloo Puffs:
Ingredients:
For the Potato Filling:
* 3 medium potatoes, boiled, peeled, and mashed
* 1-2 green chilies, finely chopped
* 2-3 Curry leaves
* 1 teaspoon ginger-garlic paste
* 1/2 teaspoon cumin seeds
* Pinch of hing (asafoetida)
* 1/2 teaspoon turmeric powder
* 1 teaspoon garam masala
* 1 teaspoon kasuri methi (dried fenugreek leaves)
* 1 tablespoon cumin coriander powder
* 1 tablespoon oil
* 1/2 teaspoon aamchoor powder (or lime juice)
* Salt to taste
* Fresh coriander leaves, chopped (optional)
For the Puff Pastry:
* Store-bought puff pastry sheets (thawed, if frozen)
Instructions:
* Prepare the Potato Filling:
* a. Heat oil in a pan and add cumin seeds. Let them splutter.
* b. Add hing, chopped green chilies, curry leaves and ginger-garlic paste. Sauté until fragrant.
* c. Add turmeric powder, garam masala, kasuri methi, cumin coriander powder, and aamchoor powder. Mix well.
* d. Add mashed potatoes and stir to combine all the spices evenly. Cook for 5-7 minutes until the mixture is well-cooked. Adjust salt to taste.
* e. Optionally, add fresh coriander leaves. Set aside to cool.
* Prepare the Puff Pastry:
* Cut the pastry into squares or rectangles.
* Assemble the Aloo Puffs:
* a. Place a spoonful of the cooled potato filling in the center of each pastry square.
* b. Fold the pastry over the filling to create a triangle or rectangle shape.
* c. Press the edges to seal the pastry and use a fork to create a decorative pattern along the sealed edges.
* Bake the Aloo Puffs:
* a. Place the assembled puffs on a baking sheet lined with parchment paper.
* b. Bake in the preheated oven at 370F for ~12 mins on one side and 3 mins on the other side or until brown and flaky
* Serve with mint chutney or ketchup.
