On the second day of Christmas, my true love Katherine said to me... lemon almond biscotti.
Serves: 1-20
Prep time: 8 minutes
Bake time: 20 plus 13 plus 13
Special tools: Vitamix Food Processor
Ingredients:
1 cup roasted almonds, pulsed
2 1/4 cups all-purpose flour
1.5 teaspoons baking powder
1 heavy pinch kosher salt
1/2 cup sugar
1/2 cup brown sugar
3 large eggs room temperature
1/2 cup extra virgin olive oil
1 tablespoon almond extract
1/2 teaspoon vanilla extract
1 lemon, zested
Method
1. Set oven to 350F.
2. Blend the eggs, olive oil and sugars in your Vitamix until frothy.
3. Add flour, baking powder, vanilla, lemon zest and vanilla. Blend until combined.
4. Add almonds and give one more quick pulse.
5. Move dough mixture onto baking tray and form into two logs. Bake until golden (20 minutes).
6. Remove and let rest for 10 minutes.
7. Slice it into 1/4 inch pieces and bake for another 13 minutes. Flip and repeat.
8. Pair with espresso or gift it for the holidays.
