Welcome to Pheba’s Kitchen, in this video I am sharing how to make delicious, crunchy pan-fried eggplants..
Ingredients:
1 – Large Eggplant
1 Cup – Panko Crumbs
½ tsp – black pepper powder
1 tbsp - red chilly powder
1 tsp - turmeric powder
7-8 - cloves of garlic
1-inch ginger cube
1/2 lemon juice,
1tbsp olive oil (or any neutral oil)
1/2 - tbsp salt.
Cooking Steps:
1. Make the marinade. In the chutney pot, add all the ingredients and grind it to a smooth paste, except crumbs.
2. Slice the eggplant vertically or horizontally, 1 cm thick.
3. Start marinating, apply the marinade and panko crumbs on both side of the sliced eggplants.
4. Drizzle little oil in the pan, once it’s hot add one slice at a time of coated eggplant and cook for 3-4 minutes.
5. Flip it and cover and cook for another 3-4 minutes on medium flame.
6. Finally, flip it again and cook for 1 minute on high and serve hot.
Serve, the crunchy eggplant with some rocket leaves, tomatoes and sour cream.
