Ray and Stevie are back on the REC TEC with a new recipe for Bruschetta Stuffed Mushrooms.
Start by de-gilling your portobello mushrooms. Next will be the stuffing mixture.
Ingredients:
10 roma tomatoes diced
1/4 cup scallions sliced
1 tablespoon of Colden's Freakin' Greek seasoning
1 shallot minced
1/2 cup spinach chiffonade
1/4 cup basil chiffonade
1/4 cup parmesan cheese grated
4 cloves garlic minced
1 tablespoon red wine vinegar
Mix this with your hands well, before stuffing into your mushrooms.
Set your grill to 375ºF. Cook your mushrooms for 25 minutes and the top with mozzarella cheese slices. Let your cheese melt into your mushrooms for 5-10 minutes.
