Zucchini Balls with Mozzarella
INGREDIENTS
1½ cups zucchini, grated
4 tablespoons bread crumbs / gluten free breadcrumbs
½ teaspoon salt
¾ cup dairy / dairy free mozzarella, grated
1 large egg / egg substitute: combine 1 tablespoon ground flax seeds + 1½ tablespoons water and set aside for 5 minutes)
1½ cups avocado oil

Mix the zucchini, breadcrumbs and salt in a bowl. Add the mozzarella and the egg and keep mixing. If the mixture is too liquidy, you can add a handful of breadcrumbs.

Heat a frying pan over medium heat. Add the oil. Form little patties and fry them for about 2 minutes on each side, or until golden.
