This festive season, try something different with laddoos. Here's one prepared with fox nuts, you will love it!
MAKHANA LADDOO
Ingredients
2 cups puffed lotus seeds (makhana)
1 cup jaggery, chopped
4 tbsps ghee
¼ cup roasted peanuts, peeled
¼ cup cashew nuts
2 tbsps pistachios
¼ cup almonds
2 tbsps pumpkin seeds
½ cup + 2 tbsps grated dried coconut
1 tbsp black sesame seeds
1 tbsp white sesame seeds
¼ tsp green cardamom powder
Method
1. To make the jaggery syrup, heat a deep non-stick pan. Add jaggery and 1 cup water and mix well. Cook till the jaggery melts and the mixture reaches one string consistency.
2. Heat ghee in a non-stick pan.
3. Add makhana and dry roast till crisp. Transfer this on a plate.
4. Heat remaining ghee in the same pan. Add peanuts, cashew nuts, pistachios, almonds, pumpkin seeds, and dry coconut and roast for 2-3 minutes.
5. Transfer the roasted mixture on to the same plate.
6. Put the roasted mixture along with the makhana in a mixer jar and grind to a fine powder. Transfer this powder into a large bowl.
7. Heat the same non-stick pan, add remaining dried coconut, black sesame seeds and white sesame seeds and roast till fragrant.
8. Transfer the sesame mixture into the ground mixture, add green cardamom powder and add the cooled jaggery syrup and mix till the mixture comes together.
9. Take a small portion of the dough and shape it into a ball/laddoo. Serve as required.
