Strawberry Daifuku is a popular Japanese sweet, it is strawberry wrapped in a sweet red bean paste and mochi. It is has a beautifully sweet taste and nice chewy texture from the mochi.
Let me know in the comments if you prefer to make it in the microwave or on the stovetop.

TIP#1
Shiratamako is the traditional glutinous rice flour used for mochi however you can use Thai glutinous rice flour as a substitute which can be more widely purchased in asian grocers.
TIP#2
Make sure your strawberries are dry before wrapping the red bean paste around it.
TIP#3
If making the mochi on the stovetop, using a non-stick pan will make it much easier.
