Ingredients:-
20 Sundried kokum petals
1 cup Fresh coconut, grated
1-litre Lukewarm Water
1 Green Chilli, slit lengthwise
4-5 Curry Leaves
2 cloves of Garlic
½ tsp Cumin seeds
¼ cup Coriander leaves
½ tsp. Sugar
1 tsp. Salt
Method:-
- Soak the Kokum petals in warm water for 10-15 minutes.
- Add the grated coconut to a mixer/grinder followed by 1 cup of lukewarm water and grind it well.
- Strain this using a sieve and grind it again by adding 2 cups of lukewarm water, garlic and cumin seeds.
- Strain again using a sieve and grind the remnants again by adding 1 cup lukewarm water and strain again.
- Using mortar and pestle, crush together curry leaves, green chillies and salt. Transfer to a bowl.
- Add the soaked Kokum to this bowl followed by salt and sugar. Mix well while mashing the Kokum with the spoon.
- Pour the coconut milk and stir.
- Sieve and refrigerate for a minimum of 30 minutes.
- Garnish with coriander leaves and serve.
Solkadhi is ready to drink!
