Ube halaya or halayang ube is a Philippine dessert made from boiled and mashed purple yam. Ube halaya is the main base in ube/purple yam flavored-pastries and ice cream. It can also be incorporated in other desserts such as halo-halo. It is also commonly anglicized as ube jam.
Ingredients:
Frozen Ube - 1 pack (Thawed)
1 Can Condensed Milk
1 Can Evaporated Milk
1 Cup Coconut Milk
1/2 Cup Sugar
1 Tbs Butter
1 tsp Ube Flavor (McCormick or Ube Flavorade)
Procedure :
1. In a pan, place all the ingredients, stir well until incorporated then cook into medium high while continuosly stirring to avoid the ube sticking into the pan.
2. When the mixture starts to boil, lower the heat to medium low. Stir continuously until the consistency becomes thick like a jam.
3. Transfer in a container or llanera. Let it cool (refrigerate). Serve and enjoy.
Note:
You can topped the ube halaya with grated cheese, macapuno or coconut strings or eat it plain. This last in the refrigerator for 14 days.
