Did someone say carrots?
Ingredients:
1. 13lbs of Carrots
2. 1L 18% Table Cream
3. 1L 2% Milk
4. 10-12 pieces of cardamom
5. 3 Cups of Sugar
6. 1/2 cup of Butter
7. Pistachios/Almonds/Walnuts
Instructions:
1. Peel and shred 13lbs of Carrots
2. Add to pot and cover over medium heat until carrots are soft (approx. 1hr)
3. Stir on high heat until water is evaporated
4. Add 1L 18% Table Cream
5. Add 1L Milk
6. Add 10 pieces of cardamom
7. Cook on medium-high heat until Milk and Cream have absorbed (approx. 2hrs)
8. Add 3 Cups of Sugar or as per sweetness preference and cook for 15 mins
9. Add 1/2 cup of butter
10. Cook until all moisture is absorbed, stirring frequently
11. Garnish with pistachios or other dried fruits of choice
12. Serve warm
