Mangalorean Rice Bhakri
Konkani style rice roti or bhakri that is roasted on a banana leaf. This is simple recipe to make. It tastes awesome due to banana leaf.
Ingredients:
One cup - Red Boiled rice or any boiled rice.
½ cup fresh grated coconut
Salt to water.
Water – as needed
Banana Leaves – cut into half (wash & wipe the banana leaves to remove any traces of moistures). Remove the spine of the leaf so what you have are equal sized square pieces.
Method:
Soak Rice for 3 hours minimum or overnight. Drain it and keep aside.
Transfer the drained rice in traditional grinding stone.
Add salt as per your taste. And add little water. Do not add too much water.
Grind into coarse paste. It should be thick dry batter.
Transfer rice paste or dough in a cooking pot.
Add grated coconut. Combine well.
Heat a tawa and keep it in low flame.
Place a big ball of rice batter and pat it to form thick round roti’s on the banana leaf.
When the tawa is hot, place the bhakri along with banana leaf.
Also place a banana leaf on the top.
It takes a long time to cook each side. After 5 minutes turn over to another side.
Remove the banana leaf in the top and turn over once again.
Fry the bhakri till you get a slight burnt texture as shown.
Cut the Bhakri's into medium pieces.
Enjoy hot roti’s with tea or chicken curry or side dish of your choice.
Note: Five to six bhakris can be made
