You can use one cauliflower head including the leaves to make this delicious zero waste recipe. I’m literally mind blown by the amazing flavour and texture every time I eat it and i can’t wait to make it again.
If you invite friends or family for dinner I guarantee this will be a show stopper!
STICKY CAULIFLOWER WINGS:
•1 x head cauliflower
•3/4 x cups flour
•1/2 x cup plant based milk
•1/4 x teasp garlic powder
•1/2 x teasp salt
•1/4 x teasp black pepper
•panko breadcrumbs
STEP BY STEP 🥣
-divide the stem and leaves from the cauliflower head and set aside for the dip recipe.
-divide the many tops of the cauliflower to have a “wing”like shape .
-prepare the batter mixing together flour,milk,garlic,salt and black pepper until you have a smooth like texture batter.
-mix the cauliflower wings in to the batter .
-in a different bowl add the panko breadcrumbs and coat the battered wings making sure they are fully covered with crumbreads so that you’ll have a great crunchy texture .
-bake them in the oven at 180* for about 20 min if you’d like to have them a bit crunchy in the middle or 30 min for a softer inside.
-while baking you can prepare the sticky sauce and dip.
STICKY SAUCE:
•1 x teasp sesame seeds
•1x teasp cornstarch
•4 x tbsp soy sauce
•1/2 x cup maple syrup
•1/2 x cup water
•pinch of ground ginger
•scallions and sesame seeds for garnish
STEP BY STEP 🥣
-in a pan mix on low heat the soy sauce, maple syrup, water , cornstarch,sesame seeds and ginger until it starts to thicken up.
-add the breadcrumbed cauliflower wings and mix with a spoon until completely coated .
-garnish with chopped scallions and dip in to the cauliflower sauce.
-serve warm
CAULIFLOWER DIP:
•chopped and blanched cauliflower stem and leaves .
•1/2 x cup plant based milk
•2 -3 x garlic cloves
•1/2 x cup peanut butter
•1/3 x cup peanuts
•1/3 x cup olive oil
•juice of half a lemon or 2 tbsp vinegar
•1/4 x teasp salt
•3 x tbsp soy sauce
•2 x tbsp grated ginger
STEP BY STEP🥣
-blanch the cauliflower leaves and stem
-blend all ingredients together until smooth.
-taste and add more milk or water if too thick.
-garnish with some fresh chilli or herbs
