The ramen at Ginza Kazami is one of the most unique in Tokyo! Their ramen is rich, thick and infused with sake kasu (sake lees). Sake lees are the byproduct of sake production. The shoyu (soy sauce) seasoned broth is made from pork and chicken bones and shellfish and carries a fruity aftertaste.
