Manakish, also manaqish, manaeesh or manakeesh or in singular form man'ousheh or mankousheh is a popular Levantine food consisting of dough topped with thyme, cheese, or ground meat. Similar to a pizza, it can be sliced or folded, and it can be served either for breakfast or lunch.
Manakish recipe dough ( will serve a 12-14 medium size manaeesh (fatayers)
Ingredients:
2 cups (500 ml) warm cows milk
4 cups of all purpose flour (660 g) + 1/2 cup for kneading the dough
60 ml vegetable oil ( or olive oil)
1 teaspoon (5 g) salt
1 teaspoon (5 g) baking powder
1 1/2 active dry yeast (6 g)
1 tbsp. (15 g) sugar
1. In a mixing bowl, add warm milk (make sure it's warm, as hot water can kill the yeast), salt, yeast, 1 cup of flour, stir well and let it sit aside until the mixture gets bubbly.
2. After 10-15 mins in mixing bowl add olive oil or vegetable oil, salt, and the rest of floor and start knead the dough.
3. knead for about 10 minutes then form a dough ball and let it sit in a bowl covered with a kitchen towel for about 1 - 2 hours or until the dough doubles in size (in a warm place to let the dough rise).
4. after the dough doubled in size, divide the dough in equal size balls, roll the bolls and place a stuffing on top.
5. Cheese manaeesh : akkawi cheese or nabulsi cheese. Mozzarella cheese with herbs like mint, fresh zaatar, parsley ect.
6. Zaatar manaeesh : dry zaatar mix + olive oil
Bake on the middle rack at 180C - 360F for about 10-12 minutes.
