These Baked Cauliflower/ Gobi Kebabs are a perfect healthy and yummy appetizer for any party and get together ! They are vegan and gluten-free! Cauliflower being packed with nutrients makes these kebabs a delicious and wholesome meal whether you wanna put them as patty in your burger, add them in a salad bowl or simply relish with the sweet and spicy coriander chutney that I have prepared here!
KEBAB INGREDIENTS
*3 cup Cauliflower, florets/ गोबी
*1-2 inch chopped Ginger/ अदरक
*4-5 Garlic, cloves/ लहसुन
*1/2 cup Coriander leaves/ हरा धनिया
*2 small Green chilli/ हरी मिर्च
*1 tsp Coriander powder/ धनिया पाउडर
*1/2 tsp Red chilli powder / लाल मिर्च पाउडर
*1/4 tsp Garam masala powder / गरम मसाला पाउडर
*1/2 tsp Chaat masala powder/ चाट मसाला पाउडर
*3/4 tsp Salt or as required/ नमक
*1 tsp Cumin seeds/ ज़ीरा
*1/2 cup roasted Gram flour/ भुना बेसन ( if you don’t have gram flour, use roasted chickpea flour/ सत्तू का आटा or oat flour/ ओट्स आटा instead )
CORIANDER CHUTNEY
*1 cup Coriander leaves/ हरा धनिया
*2 small Green chilli/ हरी मिर्च
*1/2 tsp Salt or as required/ नमक
*1 tbsp Lemon juice/ नींबू का रस
*1 tbsp Honey/ शहद or any other sweetener of your choice ( like jaggery/ maple syrup/ sugar )
*1 inch chopped Ginger/ अदरक
*2-3 Garlic, cloves/ लहसुन
*1 tbsp chopped Cashew / काजू
*1 tbsp extra virgin Olive oil/ ऑलिव ओईल, एक्स्ट्रा वर्जिन
*1 tbsp Water/ पानी
INSTRUCTIONS
1- In your blender/ food processor, add all the ingredients of kebabs (except roasted gram flour). And give a good blend till everything is well combined. Now add roasted gram flour and blend again till it’s nicely combined.
2- Now place a parchment paper on your baking pan. And brush some oil on the parchment paper. Keep the pan aside and at this stage preheat the oven at 210°C/ 350°F for 10-15 minutes
3- Now to shape the kebab patty, take a small portion from the kebab mixture, shape it into a ball, flatten it slightly in between your palms and even out the edges. Place the patty on a parchment paper lined baking pan. And similarly shape more kebabs and place them on the baking pan. Bake the kebabs in a preheated oven at 210°C/ 350°F for around 20 minutes. After 20 minutes, flip the kebabs and bake them again for 20 more minutes.
4- For coriander chutney, blend all the ingredients of chutney in a blender, till smooth and creamy. Serve the hot cauliflower kebabs with coriander chutney and enjoy!!
