Ingredients:
Chana Sprouts: 1 cup (green gram sprouts or chickpea sprouts)
Oil: 1-2 tbsp (preferably coconut oil or any cooking oil)
Mustard Seeds: ½ tsp
Cumin Seeds: ½ tsp
Curry Leaves: 8-10 leaves
Green Chilies: 2 (slit or chopped)
Ginger: 1-inch piece (finely chopped or grated)
Onion: 1 medium (finely chopped)
Salt: To taste
Coriander Leaves: Fresh, chopped for garnish
Lemon Juice: 1 tsp (optional for extra zing)
Instructions:
Step 1: Prepare the Sprouts
Soak Chana (Chickpeas): Soak dried chickpeas overnight in water. Drain them the next day.
Sprout the Chana: Place the soaked chickpeas in a damp cloth or sprouting jar for 1-2 days until the sprouts are ready.
Step 2: Cooking
Heat the Pan: Place a frying pan or wok on medium heat. Add 1-2 tbsp of ghee.Temper the Spices: Once the oil is hot, add mustard seeds and cumin seeds. Let them splutter for a few seconds. Add few curry leaves. Sauté for 10-15 seconds for a fragrant base.
Add Green Chilies and Ginger: Add slit green chilies and chopped ginger. Sauté for another minute, allowing the ginger to release its aroma.
Sauté Onions: Add finely chopped onions to the pan. Cook until the onions turn soft and golden brown (about 3-4 minutes).
Add Tomatoes and Spices: Now add chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Stir well and cook for another 2-3 minutes until the tomatoes soften and the spices blend.
Add the Sprouted Chana: Add the sprouted chana (chickpeas) to the pan. Mix everything well.Cook the Chana: Cover and cook for 5-7 minutes on medium heat, stirring occasionally. If needed, add a splash of water to avoid burning. The sprouts should cook well and absorb the flavors.
Finish with Garam Masala: After the chana is cooked, sprinkle garam masala. Stir well to coat the sprouts in the aromatic spice mix.
Garnish: Garnish with freshly chopped coriander leaves. You can also squeeze a bit of lemon juice for an added tangy flavor.
Step 3: Serve
Serve hot as a snack, side dish, or even a light meal with roti or rice.
You can enjoy it with a drizzle of yogurt or chutney for extra flavor.
