Kolhapuri pandhra rassa is a mutton soup from a recgion in Maharashtra, India. Kolhapuri people are know to eat very spicy food. This non-spicy recipe is made to balance out the spicy preparations served in the meal. It is also a perfect curry for kids or those who don't eat that spicy. I love this flavorful preparation as it has all the flavors of the meat and the creaminess from the cashews and coconut, a marriage made in heaven. Ingredients:
300 gm Mutton (I cooked 1 kg and made the roast along with this. You can take 300 gms and reduce the spices a bit)
1 Tbsp Garlic Paste
1 tsp Ginger Paste
1/2 tsp Green Chili _ Coriander Paste (Optional)
3/4 tsp Black Pepper
1/2 tsp Rock Salt
1/2 Cup Water
1 tsp Garam Masala
Masala Paste:
3-4 Tbsp Onions
50 Gm Scraped Coconut
15 gm Cashew Nuts
