The smell of freshly baked pão/pav in your kitchen is truly beautiful and unbeatable compared to anything else. Once out of the oven they're gone in seconds.
You'll need:
4 cups plain flour/maida
1 1/2 cup Lukewarm water (1/2 cup to activate the yeast and 1 cup for kneading
2 1/2 tsp Yeast or a 7g packet
2 Tbsps sugar
1 1/4 tsp salt
1/4 cup oil
A few Tablespoons of milk for brushing
The total kneading time is 10 mins but if you're kneading by hand it'll have to be 15 mins.
To bake these I used a 13"x10" deep tray. If you aren't using a non stick tray you'll need to line it with baking /parchment paper.
You can even brush the top with an egg wash. Or even melted butter as soon as they're out of the oven.
Once you take them out of the oven transfer them immediately to a cooling rack or a tea towel. This is because the steam that is trapped inside while baking still needs to escape or you'll end up with soggy or wet bread.
Add a Goan Sausage filling while rolling them out or a chicken chilli fry and follow the usual procedure.
