The perfect balance of sweet and spiced with this luscious Caramel Apple Cake. With chunks of fresh apples baked into the batter and a hint of cinnamon, this cake captures the coy essence of fall. Preheat oven to 350°. Grease an 8x8 baking pan. Set aside
In a bowl combine,
1/2 C oil
1 C sugar
2 eggs
1 tsp vanilla
1 C flour
1/2 tsp salt
1/2 tsp baking soda
2 apples, peeled, cored, chunked
1/2 tsp cinnamon optional.
Pour thick batter into greased 8x8. Bake for 40 minutes at 350°.
When the cake is right out of the oven pour hot caramel sauce over top.
Caramel Sauce:
In a saucepan melt, 1/4 C butter, 1/2 C brown sugar, 2 Tbsp milk. Boil for 3 minutes without stirring. Then add 1/2 tsp vanilla. Pour over hot cake. Cool cake for 1 hour and then slice and enjoy!
This is easy to double if you need a 9x13
