Blueberry Lemon Compote
1 qt blueberries
2-4 T honey (to desired sweetness level)
1 lemon, juice and zest
2 T ginger paste
Add all ingredients to a pan, over medium heat, and bring to a boil. Turn down heat to med-low and simmer for about 10-15 minutes, stirring frequently. Bring to desired thickness, keeping in mind the mixture will thicken as it cools. I like to see lines linger in the pan from the spatula as my stopping point. Store in an airtight container in the refrigerator. It’s so delicious and versatile. Serve over toast, yogurt, or even in a cocktail!
