Plum cake is a rich, moist, and flavorful dessert, often enjoyed during festive seasons like Christmas. Here's an easy recipe for making it at home:

Ingredients
Dry Ingredients:
All-purpose flour: 1 ½ cups
Baking powder: 1 tsp
Baking soda: ½ tsp
Salt: ¼ tsp
Spices like nutmeg, cinnamon , cardamom, cloves, dry ginger ( grind these along with 3 table spoons of sugar)
Wet Ingredients:
Butter (unsalted, softened): 100 grams
Sugar (brown or granulated): ¾ cup
Eggs: 3 large
Vanilla extract: 2 tsp
Drained Rum : 1/4 Cup
Caramelised Sugar : 1/4 Cup
Fruits and Nuts:
Drained from Alcohol : 1 Cup (adjust according to your choice)
Instructions
Preheat the Oven
Preheat your oven to (160°C). Grease and flour an 8-inch round cake pan or line it with parchment paper.
Prepare the Fruit Mix
If using dried plums, soak them (along with raisins) in rum or brandy for about 30 minutes, then drain.
Toss the plums, raisins, and nuts with 1 tablespoon of the flour/sugar powder to prevent them from sinking during baking.
Mix Dry Ingredients
In a medium bowl, sift together flour, baking powder, baking soda and salt.
Cream Butter and Sugar
In a large bowl, beat butter and sugar until light and fluffy.
Add eggs one at a time, beating well after each addition. Mix in the vanilla extract .
Combine Wet and Dry Ingredients
Gradually add the dry ingredients to the wet mixture. Do add the rum and caramelised sugar water. Mix until just combined; do not overmix.
Fold in the Fruits and Nuts
Gently fold in the floured plums, raisins, and nuts.
Bake the Cake
Pour the batter into the prepared cake pan and smooth the top.
Bake for 50 minutes, or until a toothpick inserted in the center comes out clean.
Cool and Serve
Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Serve as is, or dust with powdered sugar for decoration.
Tips:
Storage: Plum cake tastes better as it ages. Store it in an airtight container for up to a week.
Spiced Version: Add a pinch of ground cloves or allspice for an extra festive touch.
Alcohol-Free Option: Skip the rum/brandy and soak the dried fruits in orange juice or water instead.
