You will absolutely love this curry. And what’s more it can be ready in only 30 mins. Quality ingredients are key here and I would recommend getting large ripe vine tomatoes if you can.
Preparation is a bare minimum too as there are no onions to dice and even the fresh tomatoes are just cut in half, literally.

100-150ml vegetable oil
600g chicken, boneless thigh skin removed
650g Best quality vine tomatoes (Cut in half)
Large handful of coriander
4-10 green chillies ( I used 5)
3 Tbsp fresh Garlic/Ginger paste ( NOT FROM JARS) , alternatively use 3 frozen garlic/ginger cubes.
1 tsp salt (To taste)
2 Tsp fresh black pepper. (peppercorns roughly ground)
2 Tsp Coriander Powder
1 Tsp Cumin Powder
1 heaped tsp Good quality Kashmiri powder ( For deeper red, use double)
1/2 Tsp Garam Masala
2 Tbsp natural Greek Yogurt
2 Tbsp butter
Large handful fresh coriander
Ginger stripes to garnish
