Creamy Greek Vinaigrette
In your personal blender, add:
1/4 cup red wine vinegar
1/4 cup olive oil
1/4 cup mayo (I use avocado oil mayo)
2 tbsp meyer lemon juice (you might want to start with a little less if using regular lemon since it can be a bit more sour)
1 garlic clove, crushed or minced (or two small)
1 tsp dijon mustard
1/2 tsp dried oregano
1/2 tsp sea salt
1/4 tsp white pepper
1 tbsp honey
Blend until well combined.
After blending, stir in:
1 tsp dried oregano
Season to taste and store in a jar in the fridge.
Flavor will develop as it sits and it will thicken slightly in the fridge.
Use anywhere you’d use a greek vinaigrette. Enjoy!
