TOSHIKOSHI SOBA is the Soba eaten on New Year's Eve, crossing over to New Year’s Day.
I am from Osaka, so today's Soba is Kansai style, which is a light soup with light soy sauce. Toppings are Kamaboko (fish cake), Tenkasu (fried wheat flour) and Tororo Kombu (seasoned seaweed) which makes it easy and yummy!
We eat Toshikoshi soba with wishes of good health, long life and good luck for the year!
⭐️Toshikoshi soba
ingredients - 1 serving
- 400ml water
- 1 tsp dashi powder
- 1 tbsp mirin
- 1 tbsp cooking sake
- 1 tbsp light soy sauce
- 100g soba
- 1/2 agesan - Osaka dialect (fried bean curd)
"aburaage" in standard Japanese
- Kamaboko (fish cake)
- chopped shallots
- tororo kombu (seasoned seaweed)
- tenkasu (fried wheat flour)
👍I used Jyuwari Soba which is 100% made from buckwheat but you can use any type of Soba from your local store. You can buy Jyuwari Soba, Tenkasu, Tororo Kombu and Kamaboko at asian or Japanese grocery shop.
👍You can use regular soy sauce instead of light soy sauce.
If you use regular soy sauce, please add a little bit of salt. Regular soy sauce is less salty than light soy sauce so it is better to add a little salt.
