I recently played this game for the first time on my stream and had a blast with it! One of the things that intrigued me the most in my playthrough was the nigh-impossible E.M.M.I. counter.
Whenever the E.M.M.I. catches you, you have to press the X button INSTANTLY when you see the E.M.M.I.'s claw glow red & hear the screech noise. If you miss this, the consequences are effectively instant death.
It's pretty safe to say that reacting & successfully negotiating this counter is several times harder than reacting to anything Mike Tyson does in MTPO, as well as almost anything Super Macho Man 3 can do in Arcade Super Punch Out.
Despite this, I was able to pretty regularly counter this attack in my casual playthrough *a lot* more than people were telling me they were able to counter it in their playthrough. I've had pretty respectable speedrunners and fighting game players tell me they've countered this on the order or 4-5 times total in their playthroughs. I was curious and decided to tally up some stats on my counters in my blind playthrough, so I made a spreadsheet...

As it turns out, I was able to counter E.M.M.I.'s a grand total of 24 times successfully throughout the game! It was out of 73 attempts though, so my total success rate is ~32%, but that includes all the face counters. I was only ever able to counter the face 2 out of 28 attempts, and both were complete guesses. I'm pretty certain that countering the face is 100% unreactable and you need to guess it in order to have a chance at survival.
I think that they designed this such that actually countering this seems to be so razor thin that it's hard to conclusively say if it's possible to be 100% consistent at. It would be really interesting to see some other players out there who have better reaction time than me try to play this game on stream and take note of their statistics regarding how often they can counter the E.M.M.I. throughout their playthrough.
Anyways, after finishing this spreadsheet, I decided to see how many E.M.M.I. counters I could get in a row. I had a few other burst of attempts that got to 9 as well, but I couldn't get beyond this today despite it being possible. I threw my final counter too early because for all of these, I have my X button half-pressed down so that the travel between the rubber membrane in the controller has less distance to travel, in theory helping me react faster. I'm always teetering at the absolute border of pressing the button to where it went off when I didn't intend it to.
Anyways, thanks for watching!
