This is a nutritious and delicious, vegan chocolate chip cookie recipe made using chickpeas and only whole food ingredients!
Chickpea Chocolate Chip Cookie Recipe
Yield - 12 cookies
Ingredients
- 1 can of chickpeas
- 1 cup old fashioned oats (or oat flour)
- 1/2 cup Peanut Butter Powder
- 2 ripe bananas (plus 2 tbsp maple syrup for a little sweeter option)
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- cinnamon to taste
- 1/2 cup vegan choc chips
Directions
1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
2. If using oats, blend your oats in a high speed blender until a super fine powder.
3. Drain and rinse the chickpeas, then blitz in a food processor until smooth.
4. Next, add all of the remaining ingredients to the food processor.
5. Pulse until a thick yet sticky dough forms and there are no more banana chunks.
6. Stir in the chocolate chips.
7. Scoop cookie dough in about 2 tbsp balls, flatten out with a wet spatula.
8. Bake for 20 minutes, until cookies are firm to touch.
9. Let cool (or not) and enjoy!
