Hashbrown Casserole
1 package frozen hashbrowns
1 lb ground breakfast sausage
1 red bell pepper, diced
1 ½ cups milk
8 eggs
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
Pepper to taste
2 cups shredded cheese
Green onions (as garnish)
Hot sauce (if desired)
Preheat the oven to 350 degrees F. Cook the breakfast sausage over medium heat until fully cooked through. Set aside in a bowl. In the same pan, cook the hashbrowns in the sausage grease according to the package instructions, making sure they are browned on all sides. While the hashbrowns are cooking, whisk together milk, eggs, and seasonings. Spray a casserole dish with cooking spray. Place the hashbrowns down first. Layer the sausage on top. Layer the cheese on top of that. Layer the diced bell pepper on top of the cheese. Pour the egg mixture on top. Bake in the oven for one hour, or until fully cooked through. Serve with extra cheese and green onions as garnish.
